The Cake:
The ingredients for this recipe are pretty typical for any cake. However, there are a few ingredients that I want to discuss with you today. You will notice that I used buttermilk instead of regular milk. Because of its thicker and creamier consistency, buttermilk keeps the cake really moist and, surprisingly, brings out the rich chocolate flavor.
I also used warm water instead of room temperature water. Warm water helps the cocoa powder dissolve and brings out the richest chocolate flavor possible. It also helps the cake rise when you put it in the oven.
I also added cherries and chocolate chips to the batter. You are probably thinking, more chocolate??? Yes, these are double chocolate cupcakes, so the more chocolate, the better! I used frozen cherries in the cupcakes, but fresh or even dried cherries will work as well. Just be sure not to put too many cherries in because their weight will prevent the cupcake from rising properly (If you don’t mind a flat cupcake, feel free to put in as many as you want.)
Frosting:
You will love this frosting! This almond frosting complements the chocolate cherry cupcakes perfectly. Be sure to use a natural almond extract, otherwise, it will taste really artificial. Also, do not overdo the flavoring because it can easily become overpowering. I also like to add a little vanilla extract because almond and vanilla combine to create a delicious flavor.
Decorating tips:
To create the swirled-look I created on my cupcake, I used a large star tip and a pastry bag. Start on the outer edge and work towards the middle in circles, building up the frosting as you go. If you prefer a smooth look for your cupcake, you can use a butter knife to apply the frosting. If you heat up the knife under hot water as you apply the frosting, you will be surprised how smooth you can get it.

Ingredients
Double Chocolate Cherry Cake
- 3 cups flour
- 2½ cups sugar
- 1½ cups unsweetened cocoa powder
- 1 tbsp baking soda
- 1½ tsp salt
- 4 eggs
- 1½ cups buttermilk
- 1½ cups warm water
- ½ cup coconut oil
- 2 tsp vanilla extract
- ¾ cup cherries
- ¾ cup chocolate chips
Vanilla Almond Cream Cheese Frosting
- 1 tsp almond extract
- 2 tsp vanilla extract
- 6 cups powdered sugar
- 2 8oz. packages cream cheese softened
- 2 sticks butter softened
Instructions
- Preheat oven to 350°
- Place cupcake liners in pan
- Mix flour, sugar, cocoa, baking soda, baking powder, and salt on low speed with either a fork or electronic beater
- Beat together eggs and buttermilk in a separate bowl.
- Add egg and buttermilk to dry ingredients.
- Slowly add warm water and mix to combine.
- Add coconut oil and vanilla extract.
- Mix to combine.
- Add cherries and chocolate chips
- Fill cupcake liners ¾ of the way.
- Bake in oven for 25 minutes or until a toothpick comes out clean (make sure you don't confuse the cake with the melted chocolate)
Vanilla Almond Cream Cheese Frosting
- Cream together cream cheese and butter.
- Beat in powdered sugar.
- Mix in almond and vanilla extract.
- Frost Cupcakes after they are cooled.
