Chocolate Cherry Almond Cupcakes

Double Chocolate Cherry Cake
- 3 cups flour
- 2½ cups sugar
- 1½ cups unsweetened cocoa powder
- 1 tbsp baking soda
- 1½ tsp salt
- 4 eggs
- 1½ cups buttermilk
- 1½ cups warm water
- ½ cup coconut oil
- 2 tsp vanilla extract
- ¾ cup cherries
- ¾ cup chocolate chips
Vanilla Almond Cream Cheese Frosting
- 1 tsp almond extract
- 2 tsp vanilla extract
- 6 cups powdered sugar
- 2 8oz. packages cream cheese softened
- 2 sticks butter softened
Preheat oven to 350°
Place cupcake liners in pan
Mix flour, sugar, cocoa, baking soda, baking powder, and salt on low speed with either a fork or electronic beater
Beat together eggs and buttermilk in a separate bowl.
Add egg and buttermilk to dry ingredients.
Slowly add warm water and mix to combine.
Add coconut oil and vanilla extract.
Mix to combine.
Add cherries and chocolate chips
Fill cupcake liners ¾ of the way.
Bake in oven for 25 minutes or until a toothpick comes out clean (make sure you don't confuse the cake with the melted chocolate)
Vanilla Almond Cream Cheese Frosting
Cream together cream cheese and butter.
Beat in powdered sugar.
Mix in almond and vanilla extract.
Frost Cupcakes after they are cooled.
